Olives
The tradition of olives dates back to ancient times. Today, this expertise is still alive and well. In Maussane les Alpilles, several confectioners and independent producers prepare olives in the form of tapenades, olive creams, “cracked” olives flavoured with fennel, and pickled olives. Whether green or black, olives from the Baux Valley are excellent as an aperitif, accompanied by a chilled rosé or pastis. They are also a divine accompaniment to meat and stews. Their unique quality and short production period, from late August to mid-October, make them a highly sought-after delicacy.
