AOP – AOC vallée des Baux de Provence

AOP and  AOC “vallée des Baux de Provence” are respectively official French and European labels for the protection of a produce. They designate a produce for all of the steps of fabrication and realization according to know-how and knowledge in connection with the same geographic zone, which gives the characteristics to the produce. Olive oil, green and black olives are protected by AOC / AOP vallée des Baux-de-Provence.
