At Mas de Gourgonnier, the Cartier family produces AOP le Baux Baux de Provence and IGP Alpilles wines, as well as olive oil. 45 hectares of vines and 20 hectares of olive groves – They work on a soil of stony clay-limestone scree, characteristic of the southern slopes of the Alpilles. The vines are pruned using the cordon de Royat method to limit yields (40 hl/ha on average), as the AOC decree requires a yield of less than 50 hl/ha. The grape varieties are as follows: grenache, syrah, cinsault, carignan, mourvèdre, cabernet-sauvignon for the reds, white grenache, rolle and roussane for the whites, and organic farming for over 40 years, respecting the terroir and nature by minimising inputs in the vineyard and cellar.
